Out & About #978 | Akko Delights, Eaton Updates + Free Dunkaroos

It suffices to say that sudden developments can cause strategically scheduled activities to come to a screeching halt. Baking has been postponed on the bases of fatigue and comparatively higher-priority issues. My ingredients are observed to wither with time, as does my soul and once non-exhaustible source of energy.

Collapsing into bed after a late Friday night, I resurrected some nine hours later and commenced chores. About the mid-day mark, I took to constructing an Espresso Martini as a pick-me-up. Equal parts vodka, cold brew, and Kahlua were instructed, prompting 1 oz. of each component to be poured into my go-to pint glass.

The resulting concentrate was obnoxiously sweet - likely intended for sipping as a post-supper dessert, but surely not for the average weekend afternoon. Not even a copious amount of ice, a greater proportion of cold brew (my own, of course), nor water could salvage the formula. A fellow coffee fiend recommended a shot of espresso, which I mentally slotted away for testing on the next opportunity.

​The following day came errands. Over the span of one week, I'd make my third Walmart visit.

Broken storage bins had led me to the department store's outpost in Oakville, the nicer area of Uptown Core. Customer service had been friendly and reasonable, albeit not particularly efficient. Upon concluding my mission, I retreated back to the parking lot, where an altercation over a stolen bicycle was witnessed. A middle-aged man and sweats-donning teenager tugged away at the red frame, eventually taking the brawl beyond the store entrance and onto the asphalt access path. Walmart security followed closely behind the duo. One of the teenager's two backpacks hit the ground with an audible clang, yet he batted not an eyelash and sped off with the bike.

It was an admittedly shocking scene to witness given the time of day, and even more so the neighbourhood reputation. The scene led me to recall the woes of a long-time, low-income resident: continual development of the GTA meant a gradual transition from the calm suburbs to the clamour of an urban city.

​Departing the area, I continued with errands at BTrust and, upon confirmation of cash on hand, Akko Cake House.

​The early hour ensured a wide assortment of buns for my plucking, in addition to fresh trays of egg tarts emerging during my brief stay. I emerged with a decent-sized haul, all for just $11.30.
Take note: Any paper boxes now incur additional charges. For commuters or careless consumers, one may wish to bring along a reusable container to ensure structural integrity, or risk dented buns and smashed egg tarts.

My picks included the following:

  • Hot Dog Bun
  • Butter Egg Tart
  • Flaky Egg Tart
  • Pineapple BBQ Pork Bun
  • BBQ Pork Bun
  • Pineapple Pastry (Fenglisu)
Devoured over the next few hours were the Butter Egg Tart, half of the Pineapple BBQ Pork Bun, and half of the Pineapple Pastry. The Egg Tart was silky, scrumptious, and gratifying, as expected of Akko. The Pineapple BBQ Pork Bun would earn similar commentary, surpassing the low bar set forth by Hong Kong Island Bakery's miserable oniony concoction and replacing the gustatory experience with delight.

Out & About #977 | Transition to Oatmeal, Free Patties + Ethan Low Live at TD Music Hall

Over the past decade, I've embarked on countless "Journey to Health"s. Some spurred from an overdose of Lindt truffles, while others negligence of red meat. In all cases, a balanced diet had failed to be maintained, and my body suffered in an attempt to combat while attempting to operate at full productivity.

Low iron levels led to increased intake of lean pork and dark, leafy greens like kale and spinach. For my most recent disaster, low fibre intake seemed to constitute the culprit. As such, I've been working tirelessly at incorporating natural sources of the constipation-relieving component into my diet, as well as seeking assistance from OTC medication and supplements.​
​
​My former diet of bran cereal and oatmeal quickly grew tiring, even when accented with toasted pecans, ripe banana, and a sprinkle of dried fruit. Coffee, in any form, is usually welcomed with open arms, however. (The occasional slice of banana bread was not uncommon either to assist in a gradual transition.)

​The long weekend comprised primarily of at-home activities: recovery from the constipation catastrophe, sporadic bursts of dust removal, and Family Day errands - the only day where weather conditions and physical wellness aligned.
Eight days after the arrival of Lunar New Year, I finally made it to Square One's yearly exhibit outside Holt Renfrew. It was, essentially, my last opportunity to observe the installation before the scrolls would be taken down at the end of the week.

Having arrived at the mall in advance of 12 PM, I expected a relatively vacant space - an area permitting effortless flow from store to store and breezy checkouts. This was hardly the case, for the corridors had already filled with an atrocious number of shoppers.

​That said, the worst of all was definitely Walmart. Renovations entailed obstructions, partial closures, re-arrangement of products, and, most horrifically, reduced floor area and aisle widths. Increased customer volumes paired with unhurried attitudes already make for a despicable retail experience. When the venture was supplemented with narrowed aisles and uncertainty towards product placement, errand-running took a steep downward turn.

​My items of interest were procured after roaming aisles of jaggery, overpriced Large Flake Oats, and discounts on Lunar New Year serving plates. Then came the chaos of the Self Checkout section: About half of the machines were out of service.

Out & About #976 | Downtown Exploration, Snowfall + Catching up with Health

Weekly trips to the office can feel mundane: the same commute, the same scenery, and the same schedule. But I've rarely found downtown Toronto to be tame.

There are a multitude of pedestrian-friendly routes to reach the same destination, and every visit is an opportunity to peruse for something new and novel. Of course, vigilance is to be summoned at all times, for crowds are chaotic and one can often find himself or herself dodging the reeking stench of sewer while strategically swerving about unidentifiable spills on the sidewalk, as well as the homeless that may have caused them.

Swinging by a day before Valentine's Day meant witnessing a plethora of promotions for last-minute gifts.

First were Hazukido's Jumbo Heart Croissant Cookies. Admittedly curious about the partially coated, palm-sized croissant hearts, I continued on my way upon getting a peek of its $9.50 price tag.

​Venturing into Atrium on Bay, Muji was observed to be holding an end-of-season sale for their fleecy zip-ups.

Fuzzy articles of clothing were very much still in-season items, should you ask me. Both Uniqlo, where mannequins were spotted donning light jackets and spring gear, and Muji would beg to differ, however.

Out & About #975 | Hidden Heart Pound Cake

​Without any intentions of pushing the boundaries of a Wednesday evening pre-office sleep schedule, I had deemed Valentine's Day another ordinary day as far as celebratory festivities. However, the other half of the recently-formed, soon-to-pilates duo clearly had other thoughts, albeit unclear expectations.

​Hallmark holidays often fill the air with some degree of spirit, whether it be spooky, gleeful, or spring-seeking, like the imminent Easter weekend. When it comes to the ever-pink, love-filled holiday, businesses often utilize the opportunity to release themed merchandise or limited-time sets. While exclusivity piques intrigue, the proposals put forth aren't necessarily the most interesting of concepts.

​Despite enjoying the emphasis on chocolate, including Laderach's beautifully arranged truffle gift boxes, the rose bouquets, corny messages, and supposedly romantic evenings out often seem to constitute more hassle than enjoyment.
My personal approach to any holiday is the construction of themed creations. Valentine's Day is quite restrictive in this regard, with a palette centred about red and varying amounts of white pigment mixed within and characterized by gaudy-looking hearts, arrows, Cupids, and everything in between. Desserts often receive the spotlight on this day, frequently adopting the forms of chocolate cake, rose petal-topped mousses, or bouquet-able candy hearts.

I've been known to scoff at heart-shaped creations, purely since, from the perspective of a baker, the process of forming specific shapes leads to:
  • Odd-shaped scraps that can't really be repurposed (without significant alterations)
  • A shape-specific cutter or pan that will hardly see usage except during seasonal periods
  • Extra labour without noticeable payoff in complexity or flavour.

These factors were not to be excluded in my iteration of a Hidden Heart Pound Cake.
Although griping incessantly about the peculiar-shaped leftovers from crafting theme-specific shapes, I proceeded to do just that - since, technically, the process, albeit tedious, wasn't a tremendous challenge.

The main cake adopted the form of Sunday Baking's trusty Condensed Milk Pound Cake. This recipe has been referenced time and time again, and for good reason. It's a solid formula that can be crafted with common household ingredients and utilizes no more than one heat-proof bowl, a whisk, and a spatula. (The hand mixer is optional, but recommended to ease wrist strain.)

Used to form the heart-shaped interior was Sunday's Chocolate Pound Cake recipe, which dates back to 2016. She has since released a handful of new chocolate pound cakes (gluten-free, almond crunch-coated, and more), but this version was exceptionally straightforward in nature, and involved the same roster of ingredients as the basic brownie.

Out & About #974 | No-Bake Mugwort Mousse Cake + Whole Wheat Pineapple Buns

​Chinese New Year wasn't on my mind this year - a shocking announcement, I am aware. But comparatively more striking stressors had left me bereft of reasons to celebrate. My mind debated whether one's sheer existence incited moving forward, or whether one was required to move forward in order to continue existing. Needless to say, the festivities - and later my overall health - had been ignored altogether.

I must admit: I went slightly mad during this period, with an unhealthy urge to purge depressing thoughts with soulless creative pursuit. There were countless items of affection and little time to waste. The longer those ideas bounced about my mind, the more contemplative I became, eventually expanding into more projects than both my physical abilities, diet, or freezer could sustain.
1) No-Bake Mugwort Mousse Cake

On some days, you just want cake. But those days may coincide with non-hair-washing days. In those cases, no-bake cakes are the way to go; while they require lengthier chill times, they are also a convenient method of using up soon-to-expire, neutral-flavoured biscuits, such as milk and honey ones I picked up at Eataly that didn't succeed in earning a title as an item of affection in the household.

Looking to revisit the mugwort-chocolate combination, I attempted a tri-layer creation of biscuit base, mugwort mousse, and chocolate glaze.

The crust was sourced from Sunday Baking's Easy No-Bake Cheese Cake with Peach Jelly, using 120 g of pulverized biscuit and 50 g of melted unsalted butter. Pressing the fine mixture into three mini springform pans - recently re-discovered whilst cleaning (oops!) - the pans were allowed to rest in the refrigerator for at least thirty minutes before the subsequent layer was poured on top.

​The centremost layer was the trickiest, for a recipe did not exist for the flavour swap. Sunday's egg-less mousse was adapted for the dusty teal inclusion by mixing mugwort powder with melted white chocolate to form a paste, then loosening the mixture with a bit of oil - and, later, hot water, for easier incorporation.

​Admittedly, it was a looser consistency than desired, even after chilling overnight. Its edges did not set smoothly, resulting in a dull, uneven surface for glazing. Moreover, the glaze also dragged with it any loosened portions of mousse, causing milky trickles down the side of the cake.

With panic on the horizon, I rapidly constructed a ganache to camouflage the imperfections. Instead of a 2:1 chocolate-to-cream ratio, I opted for 180 g of couverture and 149 g of heavy cream, hoping for a thick coating that would set with ease.

​An excess of glaze and ganache would prevail. The glaze would be covered with cling film and placed into the fridge until a suitable use could be determined. Meanwhile, the ganache was poured over a tray of almonds - a specimen that could likely be used for decoration, or so I naively believed.

Out & About #973 | Roasted Garlic + Pepper Soup, Relishing IKEA Coffee + More Hockey at Nathan Phillips

Sleep deprivation continued into the work week, with my average duration of rest averaging at five and a half hours.
Appetite levels were relatively low; similarly, I struggled with consistent productivity output.

In an eager attempt to clear out the freezer in preparation for the next batch of creations, I revealed the Mini Raspberry and Apple Pies acquired from Al Ferri and Sons last fall.

​Heeding the instructions on the packaging, I returned to the toaster oven some thirty minutes later to find lard-like (ghee? lard? oil?) aromas and relatively pale shells. Juices had gushed from the Raspberry one, staining its surface with a humorous fuschia stream.

Both pies featured noticeably bland, water-logged fruit fillings. While the Apple featured soft yet structured slices, it was essentially flavourless without a speck of cinnamon or brown sugar in sight. Refreshing and tart was the Raspberry, but utterly lacking in complexity.
Despite visually acceptable, the crusts were an abomination in the gustatory realm. Laced with the bitterness of commercially stabilized shells, I couldn't stomach more than a few forkfuls before grimacing with disgust. Little had I known the meaning of glorious, all-butter crusts until sampling the travesty.

I unveiled my highly coveted Sho Chiku Bai that evening, indulging in a glass following dinner. It was, regrettably, one of my lesser informed decisions, for the alcohol inhibited restful slumber, in spite of inducing initial feelings of drowsiness, and led to the formation of phlegm in the throat.

To make matters worse, incessant sneezing, cupboard-slamming, and door-opening would reverberate from the ground floor kitchen and garage shortly after I had managed to fall asleep. Rejoining the land of dreams proved extraordinarily challenging, causing my entry into the first in-office day of the week to be made with scarcely five hours of sleep. Needless to say, I was beyond irritable and hardly functioning. Delays on the GO didn't quite help either.

​Lunchtime saw exploration of the Loblaws at ​College and Church. The interior had been decorated with Lunar New Year and Valentine's fixtures - both red and equally in-your-face.

​After making my rounds about the ground floor, I boarded the escalators to the second floor. There, one would find LCBO, Joe Fresh, and public lavatories. Entering into the indoor plumbing facilities was yet another mistake of mine, for the stalls were revolting, bearing questionable stains and smears and even housing an orange crawler the length of my thumb.

Out & About #972 | IKEA North York, Dal Pilates Trial Class + Jokbal Night Market

I can count the number of times I've visited IKEA on one hand, and perhaps with less than five fingers. The first recollection likely took place at the Etobicoke location, where a member of the household grimaced at the griminess of the dining facilities and complained audibly while wiping the entire surface with a wet towelette.
The second was probably a post-hiking excursion whereafter the evening ended with a sprint to VMC's washroom facilities.

​Although the downtown outpost has been explored on a number of occasions, its compact selection differentiates it from the suburban standalone stores.

Venturing to the North York location in advance of a pilates trial class had been my proposal. The inclusion was intended to supplement my ongoing organizational endeavour with items of need: possibly more bins, and possibly more options to restructure the a less-than-seamless decade-old system.

​The stairwell led up to a number of showrooms, where those less acquainted with the houseware store could envision possibilities for maximizing space on a budget. This element was particularly important as someone who has lived with an abundance of personal space their entire life.

​While the showrooms included shelves filled with a small quantity of the featured items, locating the store's comprehensive assortment involved walking past the showrooms. It was in this moment that I recalled the frustration of past experiences: being unable to quickly enter and exit without walking through the whole store for a singular item. I've never been one to browse aimlessly, though my companion for the day absolutely embraced the laidback approach.

​Once all sections had been perused and organizational items of interest selected, we proceeded to the checkout. Then, we meandered back to the rooftop parking lot to unload the haul.
My one gripe about all IKEAs remains the lack of receipt clarity: a foreign product name replaces a condensed description of the item(s) purchased, providing minimal information to the average English-speaking consumer.

​The clock hovered about 3:30 PM at this point. Back to the houseware we trekked, this time making a beeline for the dining area.
I had voted in favour of more gratifying picks over the hot dog- and soft serve-retailing kiosks. This decision prompted review of the second-floor offerings, which spanned meal trays of Swedish meatballs, cakes, coleslaw, and more.
IKEA Family member status would unlock free Regular coffees. Consequently, a white ceramic cup would be placed on the plastic, white-and-yellow "Hej!" tray.

Out & About #971 | Hitotoki Bakery, Banana Bread Three Ways + Samsung S24 Pop-Up

My appearance at the office was no longer a surprise this time around.

Striding with confidence, I arrived at Nathan Phillips Square to find barriers erected along the perimeter of the skating rink. Preparations were underway for the NHL All-Stars weekend.

Amateur skaters could take advantage of railings for support and free skate rentals during off-peak (non-game) hours.

The treat supply was also restored with freezer cleanout Marbled Banana Bread - a necessary evil in preparation for my next round of experiments - and remaining Carrot Cake.

Lunchtime saw exploration of IKEA, wherein washrooms were discovered, splatter screens were found, and an oven mitt and dough cutter duo was procured.

​Proceeding northeast, I chanced across the peculiarly named Vietnamese eatery of Beyond Fusion+. The establishment had surfaced several times on Too Good To Go (before I had uninstalled the app), though didn't appear particularly appealing beyond its colourful logo and menu.

​Being situated at the ground level of a residential building and within close proximity to student housing, the storefront was not devoid of delivery drivers during the early afternoon hours.

​At the base of rather dilapidated structure at the northwest corner of Yonge and Church was a combined Loblaws-Starbucks-LCBO fixture. The inclusion was a strange one, yet nonetheless worth noting should the need for Loblaws arise.

Continuing westbound along the south side of College, I eventually arrived at the doors of Hitotoki Bakery. Across the street was Sanuki Udon, the supposed new occupant of Cuppa Tea (and formerly Jule).

​Beyond the acquisition of free Mini Palmiers with social media interactions, I hadn't initially intended on dwelling. The interior of the cafe was quite compact with limited seating, either a handful of street-facing stools or one booth served by two teensy tables. Just above the booth was small potted shrubs and a clock featuring bread rolls and pretzels instead of numbers.
