Ginger Molasses Loaf Recipe Adapted from thekitchn Scaled to fit one standard load pan INGREDIENTS 84 g unsalted butter, cut into chunks 3.3 oz molasses 2.2 oz corn syrup 1.0 oz honey 71 g brown sugar 33 g grabulated sugar 211 g AP flour 1/4 tsp fine salt 1.25 tsp baking soda 1 tsp ground ginger 1/2 tsp cinnamon 1/2 tsp pumpkin pie spice 1 tsp vanilla extract 1 tsp orange extract 1 large egg 150 ml milk * DIRECTIONS 1) Mix orange zest, granulated sugar, and finely chopped ginger. Set aside. 2) Melt butter. Whisk in molasses, finely chpped ginger, sugars until homogenous. Let cool. 2) Once cooled, whisk in vanilla, orange extract, and eggs. Milk is the last wet ingredient to be incorporated into the batter 3) Whisk in dry ingredients. Once batter is homogenous, switch to a spatula and scrape the sides of the bowl to ensure all pockets of flour are incorporated. The batter should look like the texture of dalgona candy (many air pockets) and emerge around 2 shades darker than the honeycomb candy. 4) Bake in a loaf pan at 350 F for 50 mins until skewer comes out clean. Let cool 20-30 mins before cutting. 5) Enjoy! Notes - Any kind of molasses should suffice, but feel free to use your trusted brand or local go-to for more budget-friendly alternatives. - Other liquid sweeteners (and perhaps alternate ratios) beyond corn syrup and honey may also work! That said, the concept has yet to be tested. - This loaf likely won't be enjoyed by those with strong aversions to molasses and ginger, but is otherwise an amazing, festive treat for holiday parties - 2% milk was used in this recipe. 1% milk would likely yield similar results, but the substitution is unverified at this point.
